COSTIERE DE NIMES
It consists of a large terrace of pebbles, the “Gress”, deposited by the Rhône and the Durance Rivers. These pebbles radiate back the heat from the sun during the night. The temperature is constantly regulated by the nearby Mediterranean Sea and the “Petite Camargue” (marshy) area.
Wine production: winemaking and ageing
Our main strengths: the cellar has been completely made over and considerably extended (600 m2). Additional space for the vats was fitted out in parallel and top-notch winemaking equipment bought, to ensure the optimal quality of our wines. The modernization of the equipment in terms of collection, the thermoregulation in the tanks, the purchase of two pneumatic presses, a ‘flash-détente’ (a vacuum cooler apparatus), a rotary filter and a number of other improvements have helped set up highly efficient vinification equipment. In addition, air-conditioned storage is provided for the ageing of bottled wines.
The tastes of grilled meats, vegetables and fish will be enhanced with this wine which can also be enjoyed as an aperitif.
